Amish Sugar Cookies

These are the very best. A soft dough to handle but made easier by chilling well. The best ever!!!


1 cup margarine, a must     1 tsp. lemon extract
1 cup cooking oil 2 eggs
1 cup granulated sugar 4 1/3 cups flour
1 cup powdered sugar 1 tsp. cream of tartar
1 tsp. each vanilla 1 tsp. baking soda

Cream margarine and oil blending well. Add both sugars. Add flavorings and eggs mixing well. Combine dry ingredients and add in thirds. Chill 3 hours. Shape into 1 1/2” balls. Flatten each cookie with a sugared bottom of drinking glass. Bake at 350F. on a parchment covered baking sheet or lightly greased. Bake for 8-10 minutes or edges slightly browned. Makes 4 dozen cookies.

Tip:
A quick and easy summer time dessert can be enjoyed by placing a sugar cookie on a plate, top it with a large scoop of vanilla ice cream and spoon over some sliced sugared fresh strawberries, top with a dab of whipped cream.
