Apple Streusel Cheesecake

Combined to create this old world cheesecake are thin layers of spice cake, brown sugar sauteed apples, making a creamy light, lemon flavored cheesecake topped with an almond streusel. Time consuming but worth every mouthful. It’s party time!!!!


Spice Cake
18 oz. spice cake mix
with pudding added  
1/3 cup cooking oil
1 envelope Dream Whip 1 tsp. vanilla
1 1/4 cups water 1 tsp. rum extract
3 eggs

Apples
4 golden delicious apples 1/3 cup brown sugar
1/2 tsp. cinnamon 1/4 cup butter

Cheesecake
4 - 8 oz. pkg. cream cheese     2 Tbs. fresh lemon juice
1 1/4 cups sugar 2 tsp. grated lemon peel
4 eggs 1 tsp. vanilla

Streusel
3/4 cup flour 1/2 cup sliced almonds
1/2 cup sugar 4 Tbs. butter, melted
1/2 tsp. cinnamon    2 tsp. grated lemon peel

Sour Cream Topping
1/2 cup sour cream
1 Tbs. sugar
1 tsp. vanilla

NOTE: Grate the peel of one lemon for the peel in this recipe.

Streusel: Combine streusel ingredients, mixing with a fork or fingers to make crumbs and little lumps. Place in a 13”x 9” pan and bake for 15 minutes, while cheesecake bakes. Remove and cool.

Cake: Place all ingredients in mixing bowl and beat until mixture thickens. Cut and place a piece of wax paper or parchment paper to fit the bottom on a 9 1/2“ or 10” springform pan. Pour into pan a little LESS than half the batter. Make a 9” cake or cupcakes out of remaining batter. Bake at 350F. for 15-18 minutes for 10” pan. Test with toothpick. Cool on rack, then remove from pan and base. Wrap in foil that has been sprayed with Pam, and freeze. Best done a day ahead.

Apples: Peel and core apples. Cut into small dice. Saute everything in fry pan until apples are just tender. Let cool in pan.

Cheesecake: Having cream cheese at room temperature, cream adding sugar. Add eggs one at a time. Add lemon juice, peel and vanilla.

Assembly: Remove cake layer from freezer and with a long serrated knife, cut into two thin layers. Grease and lightly flour bottom of springform. Place in layer of cake, cut side up. Spread with half the apple mixture. Pour on half the cheesecake batter. Spread evenly. Place on last layer of cake. Spread on remaining apples. Pour on remaining cheesecake batter. Smooth top. Bake in a preheated 350F. oven for 40-45 minutes or until a knife inserted deep into cheesecake comes out set. Spread with sour cream.
