My grocery store has great, tender asparagus. Either a super brunch or lunch idea!
12 asparagus, trimmed and cut in half | 1 Tbs. fresh lemon juice |
2 roasted red peppers, peeled | 1/2 tsp. minced garlic |
2 Tbs. olive oil | 4 English muffins, lightly toasted |
2 Tbs. chopped fresh basil | 8 slices Canadian bacon |
1 Tbs. Dijon honey mustard | 8 oz. Brie or Dilled Havarti cheese, sliced into 8 pieces |
1 pkg. Hollandaise Sauce mix, prepared as package directs.
Cook asparagus until just tender,drain. Cut peppers into strips. In a bowl combine olive oil, basil, mustard, lemon juice and garlic. Whisk well. Brush on muffin halves; place on baking sheet. Place on Canadian bacon, asparagus, peppers & cheese. Place about 6 from broiler for about 1 minute or melted. Spoon Hollandaise sauce over muffins. Garnish with a slice of tomato. Serves 4 -8.
