Shredded Barbequed Chicken Sandwich

A delicious party sandwich and a great do-ahead. A crock pot easy thing! Please use the K.C. Barbecue sauce. It makes all the difference.


2 1/2-3 lbs. skinless, boneless chicken breasts   1 cup catsup
2 Tbs. cooking oil 1/4 cup honey
seasoned salt, your favorite 1/2 cup brown sugar
1 lg. sweet onion, chopped 1-3 tsp. chili powder, your choice
1/2 cup K.C. Original Barbeque sauce 1 tbs. Worcestershire sauce
2/3 cup water

Cut each chicken breast into three pieces, if large. Sauté chicken in oil in fry pan, seasoning as you go, until golden brown. Place in crock pot. Sauté onion until tender. Add remaining ingredients and simmer to blend. Pour over chicken and cook on HI for 5 hours until tender enough to shred. Cool meat. Shred and place meat back into sauce and heat on HI for 30 minutes. Serve on buns. A good thing to bring to a gathering. This freezes well. Makes 10-12 large sandwiches served on hamburger buns.
