A wonderful hearty sandwich. A great sandwich to serve at that next casual party.
8-1/2 thick pieces boneless pork loin*
1 Tbs. oil
your favorite seasoned salt
Using a meat tenderizer mallet, pound meat to 1/4 thick. Season and saute in oil. Place in baking dish and set aside.
1 small onion, chopped | 1 Tbs. lemon juice |
1 Tbs. oil | 1/2 cup water |
3/4 cup catsup | 1/4 cup brown sugar |
1 Tbs. worchestershire | 1-2 tsp. chili powder |
Saute onion in oil until tender. Add remaining ingredients and bring to the boil. Pour over meat, cover and bake 350F. for 1 hour. Remove cover and bake 15 minutes more to reduce sauce and thicken.
2 large sweet onions, sliced |
2 Tbs. butter |
1 Tbs. oil |
1 Tbs. brown sugar |
salt and pepper |
In large fry pan saute onions in oil with remaining ingredients. Reduce heat to lowest and continue to cook onions until golden and glazed.
8 slices Baby Swiss cheese |
8 toasted hard rolls |
Either butter and pan fry rolls or pop under the broiler to toast. Place on a piece of pork, a pile of onions and a slice of cheese. The cheese will melt by itself. Serves 8.
*This is great for a party. Buy a pork loin and slice it yourself. After the pieces have been brown and sauce has been poured over, this can be refrigerated and baked just before needed.
