Caramelized Apple Bread Pudding

Enjoy this lower fat version of this classic treat.


Nonstick spray 3 cups 1% milk
2 eggs 1 Tbs. butter
10 Tbs. sugar, divided     3 1/2 cups, Golden Delicious apples,
peeled, cut 1” pieces, about 3-4 large
1 tsp. vanilla 5 cups Italian bread, cut 1” cubes
with crusts removed
1/2 tsp. cinnamon

Preheat oven 350F. Spray a 12” x 8” pan. Whisk eggs, 6 Tbs. sugar, vanilla and cinnamon in medium bowl. Bring milk to simmer over medium heat. Slowly whisk into egg mixture.Set aside.Saute apples in butter with 4 Tbs. sugar until apples are tender. Combine with bread cubes. Place in pan and pour egg mixture over evenly.Let stand 20 minutes, pressing cubes so they will absorb.Place in a larger pan and add hot water half way up the sides of pan. Bake 35-40 minutes. Serves 8.
