You can cook some fresh broccoli for this or use frozen to save a little time. This recipe is from Nancy and is really good! Everyone always loves it.
4 Tbs. butter | 3/4 cup corn flake crumbs |
2 Tbs. flour | 1 - 16 oz. can corn, drained |
1/4 tsp. salt | 2 - 10 oz. pkg. frozen broccoli, thawed |
1 1/2 cups milk, warmed* | 1 - 4 oz. jar pimento, drained |
1 1/2 cups shredded Cheddar cheese |
In saucepan melt 2 Tbs. butter. Add salt and flour and blend with whisk. Slowly add warmed milk, whisking in to a smooth white sauce. Add cheese and melt, stirring constantly. Add 1/4 cup corn flake crumbs to this and mix well. Combine corn and pimento. Arrange broccoli and corn mixture in baking dish. Pour sauce over. Toss remaining crumbs with remaining melted butter and sprinkle on top. Bake 350F. for 30 minutes. *If your milk is warm when making a white sauce, the sauce will not get lumpy.
