Just in time for the Holidays and cranberry season. This works best with
fresh cranberries. The frozen berries add too much water, changing the texture
of the pie. Some whipped cream or a scoop of Cinnamon Ice Cream is an additional
must.
3 1/2 cups fresh cranberries | 1/4 cup light corn syrup |
1/2 cup raisins, plumped* | 2 tsp. grated orange rind |
1/2 cup chopped walnuts | 2 Tbs. Grand Marnier or orange liqueur |
1/4 cup mini- chocolate chips | 1/4 tsp. salt |
3 eggs, beaten | 1 Tbs. butter, melted |
1 1/2 cups sugar | 1 tsp. vanilla |
3 Tbs. flour | 1 unbaked 91/2 deep-dish pie shell |
* Place raisins in small bowl, add 1/4 cup water and microwave for 45 seconds. Let cool and then drain.
Preheat 375F. Combine in food processor and coarsely chop cranberries
and raisins. Put into a bowl and stir in chocolate chips.Set aside. In mixing
bowl combine eggs, sugar, flour and corn syrup. Add remaining ingredients
and pour into pie shell. Bake at 375F. for 45 minutes or until center
is set. Cool on rack. Can be served warm.
