CHERRY TOFFEE CASHEW COOKIES

A great family cookie. Nothing beautiful but the taste!


1 1/2 cups margarine       1 1/2 tsp. baking soda
3/4 cup sugar 10 oz. pkg. vanilla (white) chips or 2-4 oz.
Ghirardelli white chocolate bars, chopped
3/4 cup brown sugar 1/3 cup Skor toffee bits
2 eggs 1 1/2 cups dried cherries or cranberries
1 tsp. vanilla 2 cups cashews, chopped
3 3/4 cups flour

In large mixing bowl cream the margarine and the sugars. Cream until light in color. Add eggs and vanilla. Chop white chocolate bars, if using. Add flour and baking soda, mixing well. Add cherries, white chips, toffee bits and cashews. Mix well. Chill dough about 1 hour, as it will be soft. Make about 3/4” balls and place on ungreased or parchment lined baking sheets. Bake in a preheated 375F. oven for 12-15 minutes. Cool cookies on a rack. Makes about 4-5 doz. Outstanding!!
