Coconut Butter Spread


I bought some of this while on a cruise. I worked until I came up with what I thought was a duplicate. It is delicious on an English muffin, as a pancake topping or whatever. This would make a great hostess gift. Yes, it’s loaded with cholesterol, but it’s Christmas!



1/2 cup soft butter, a must for flavor
1 cup flaked coconut, slightly toasted
1/3 cup coconut cream (Coco Lopez)*
1/4 tsp. almond extract
3 Tbs. brown sugar
2 tsp. dark rum or 1/2 tsp. rum extract
1 tsp. vanilla
1/4 cup toasted, sliced almonds


Put everything in food processor or blender except almonds. Pulse a few times to blend. If doing this in a blender, you will have to push the mixture down a few times. Stir in almonds. Pack in a pretty jar and keep chilled. A slight warming in the microwave will bring this to a spreadable consistency. Makes about 1 cup. Not near enough in my book!!

*Coco Lopez is available at grocery and liquor stores. It’s used in making Pina Colada’s.




Holiday Idea/Tip!

Wrap kitchen gifts in a Holiday napkin or try this on a jar top. Buy a pair of red socks. Pull the cuff over the top of the jar. Tie a green ribbon with a jingle bell on to the toe of the sock. You have a jar with a stocking cap. If you would like the top of the jar have a little puff, put a handful of fiberfill or a scrunched up plastic bag to the top of cover.
