Comfy Chicken and Dumplings



Fast and delicious. Even faster with leftover chicken or turkey! Comfort food, just in time.



1 1/2 lbs chicken breasts, cooked and diced-See Note    2 Tbs. dried parsley flakes
2 medium potatoes, cubed 1-4 oz. can sliced mushrooms,drained
3 carrots, sliced 1/2 inch
3 stalks celery, sliced 1/2 inch salt and pepper to taste
1 medium onion, chopped dash celery salt
2 cups chicken broth* 1- 10 oz. can Cream of Chicken soup
1/2 cup milk 1 cup frozen peas


Dumplings
2 cups Bisquick
1 cup milk
2 tsp. parsley flakes or fresh
dash of celery salt


Place veggies in large soup pot with cover. Add chicken broth. Cook just until vegetables are tender. Add parsley, mushrooms, seasonings, soup and milk. Mix to blend soup. Add chicken and peas; simmer, uncovered for 10 minutes. Dumplings: Combine all ingredients and put 10 spoonfuls on top of mixture. Cook uncovered 10 minutes, cook another 10 minutes, covered. Serves 6-8.

Note: Chicken can be poached in broth in recipe.
