Country Corn Bread

This would make an excellent dessert. Just top a square with your favorite sugared berries and a scoop of vanilla ice cream on the side or a dab of whipped cream. This is the best corn bread I’ve ever tried and I’ve tried many!! It is very much like cake! Definitely not low-cal ,but worth it!!


1 cup butter, soft 2 cups yellow corn meal
2 cups sugar 1 3/4 cups CAKE FLOUR
4 large eggs 1 Tbs. baking powder
1 tsp. vanilla 2 cups sour cream
1 tsp. salt 2 Tbs. grated orange rind, opt.

Preheat 350F. Grease and sugar a 13”x 9" pan. Set aside. In mixing bowl combine butter and sugar and cream well. Add eggs one at a time, beating well after each addition. Add vanilla. Combine dry ingredients in another bowl and mix to blend evenly. Add dry ingredients and sour cream all at once. Mix well and spread evenly into prepared pan. Batter ill be thick. Bake 30 - 40 minutes or until tester comes out clean. Cool, serving warm.
