DOUBLE CHOCOLATE CHERRY OATIES

A soft, loaded with goodies oatmeal cookie.


1 1/2 cups dried cherries
1/3 cup brandy or fruit juice
1/4 cup water

Combine these ingredients in a micro-safe bowl. Cook uncovered for 2 minutes. Cool and drain reserving liquid.

3/4 cup butter, soft 1/4 tsp. salt
3/4 cup sugar 1 tsp. baking soda
3/4 cup brown sugar     2 1/4 cups flour
2 eggs 1 1/3 cups quick oatmeal
2 tsp. vanilla 1 cup white chocolate chips
reserved liquid 1 cup semi-sweet chocolate chips
1 cup coarsely chopped walnuts

Cream butter with sugars until light in color. Add eggs, vanilla and liquid from cherries. Mix well. Combine dry ingredients and add. Mix and add chips and nuts. Mix and add cherries. Chill dough 2 hours. Dough will be soft. Shape into rounded tablespoonful. Place on parchment covered or lightly greased baking sheet. Bake in a preheated 375F. oven for 10-12 minutes or just lightly golden brown. Makes about 4 dozen. Store airtight to keep soft.

*Dried cranberries can be used.
