Dilly Creamy Potatoes

My daughter-in-law Kerri, makes these fast and easy potatoes on those very busy nights. If you are serving a bunch, you will want to double this.


2 Tbs.butter or margarine, divided 1/4 cup water
4 medium potatoes, peeled and sliced         1/4 tsp. dried dill weed
2 tsp. flour 2 tsp. grated Parmesan cheese
1/2 tsp. chicken bouillon granules 1/2 cup shredded cheddar cheese
1/4 cup milk

Place 1 Tbs. butter and potatoes in a 2 qt. casserole and cover. Microwave on HI for 5 1/2 - 6 minutes or until potatoes are tender. Stir half way through cooking time. Set aside. In a large measuring cup melt remaining 1 Tbs. butter. Stir in remaining ingredients except cheeses. Micro for 1 1/2 - 2 minutes, stirring half way through. Cook until thick. Add cheeses and stir until melted. Pour over potatoes and gently mix. Micro for 1-2 minutes until heated through. Serves 3-4.
