Easter Strawberry Gelatin Salad

This was my mother-in-laws favorite gelatin salad. It was a must for Easter dinner. It’s a pretty pink and when garnished with fresh strawberries, ever so springy!


1 1/2 cups boiling water 1 - 8 oz. can crushed pineapple
1 - 6 oz. pkg. strawberry jello 1/2 cup chopped pecans
1 - 10 oz. pkg. frozen strawberries,
partially thawed
1 cup sour cream

Add gelatin to the boiling water. Stir well making sure all gelatin has dissolved. Add strawberries and stir in. Chill until slightly congealed. Add pineapple with juice and nuts and mix. Pour half mixture into a sprayed gelatin mold. Chill until this starts to set. Add sour cream to remaining gelatin and whisk in smooth. No lumps, please!! Carefully pour on top of other gelatin and chill until serving time. Serves 10.
