More cake-like, these are really super muffins. One is never enough!!
2 1/3 cups flour | 3/4 cup sugar |
2 tsp. baking powder | 1/2 cup margarine, soft |
1/2 tsp. baking soda | 1 egg |
1/2 tsp. salt | 1 cup milk |
1/4 tsp. ground coriander | 1 cup fresh or frozen blueberries |
Combine dry ingredients and set aside. In mixing bowl combine sugar and margarine and cream well. Add egg and blend well. Add dry ingredients alternately with milk. GENTLY fold in blueberries. Either grease or paper-line muffin pans. Fill about 2/3 full. Bake at 400F. for 20-25 minutes. Makes 1 1/2 muffins.
