This recipe is old and faithful. It chills in no time and is the perfect last minute dessert.
1 1/4 cups chocolate graham cracker crumbs |
1/3 cup sugar |
4 Tbs. butter, melted |
1/4 cup chopped pecans |
Combine these ingredients; press into the bottom of a 8 x 12 baking dish. Bake 350F. for 5 minutes; its easier to serve. Cool in freezer.
1 - 3 oz. pkg. orange gelatin* | 2-3 Tbs. Grand Marnier liqueur |
1/2 cup boiling water | 12 oz. carton Cool Whip, thawed |
1 - 16 oz. carton small curd cottage cheese or low-fat | 1 - 6 oz. can mandarin oranges,drained & cut into pieces |
1 Tbs. fresh lemon juice | Garnish: Extra Cool Whip and drizzle with chocolate sauce. |
Place gelatin and water in food processor or blender. (Actually, the blender gets this smoother!) Blend to mix. Add the cottage cheese and blend smooth. Add lemon juice and Grand Marnier or other orange liqueur. Pour into a mixing bowl and add the partially thawed Cool Whip. Fold in and add the mandarin orange pieces. Pour over cooled crust and chill for 45 minutes to 1 hour.* Use your favorite flavor. You will never guess this has cottage cheese in it.
