Cheesy Ham & Potato Hash

Serve this for a brunch with scrambled eggs on the side or a main dish with a nice salad.


1 - 32 oz. bag frozen hash brown potatoes, thawed 1 1/2 cups milk
1 cup chopped green pepper 1 cup shredded cheddar cheese
1 cup chopped red pepper 1 Tbs. Dijon mustard
3 cups diced ham* 6 sliced scallions
1- 10 oz. can cream of potato soup 1/2 tsp. salt & freshly ground pepper

In slow cooker combine first 4 ingredients. In a mixing bowl combine the remaining ingredients mixing well. Add this to slow cooker, stir to blend. Cook on low for 5 -6 hours. Serves 6.*Check in your market where they carry ham slices. They also have cubed turkey ham.
