Easy Mexican Non-Fried Ice Cream

Tastes as good and no frying! Very much like one of your favorite Mexican restaurant.

3 cups crushed Honey and Nut Corn Flakes
2 tsp. cinnamon
1 qt. great vanilla ice cream
Topping: honey, whipped cream, dash of cinnamon and cherries for the top.


Combine crushed coarsely flakes and cinnamon in a deep bowl. Scoop balls of ice cream about 3/4—1 cup size. Roll in flakes and put into container with cover. Work fast!! Freeze overnight. Place ice cream ball in dish. Top with a generous drizzle of honey, dash of cinnamon, whipped cream and a cherry. Makes 8 balls.
