A funny name for a great bar cookie.
1/2 cup butter, soft | 2 tsp. vanilla |
3/4 cup sugar | 1 1/2 cups flour |
1 egg | 1 tsp. baking powder |
3 eggs, separated | 1/4 tsp. salt |
1 cup mini-marshmallows | 3 eggs whites |
1/2 cup chopped walnuts | 1/2 cup light brown sugar |
3/4 cup semi-sweet chocolate chips | 1/2 tsp. grd. cinnamon |
Preheat 350F. Grease a 13 x 9 pan. Cream butter and sugar. Add egg and 3 yolks. Add vanilla and blend. Combine and add dry ingredients; mix well. *Spread batter evenly (see Note) into bottom of pan. Sprinkle marshmallows, chips and nuts over batter. Beat whites and gradually add brown sugar and cinnamon. Beat until stiff. Spread over top with the back of a spoon. Bake 25 - 30 minutes. Cool completely and cut into bars.*NOTE: This mixture is stiff and difficult to spread. Put mixture in blobs in pan as evenly as possible. Spray blobs lightly with Pam. Place a piece of plastic wrap over batter. Smooth evenly with hand. Do I have to say, remove the plastic wrap before adding the rest of the stuff?
