Mushroom Chowder

I used this when I was teaching and everyone seemed to loved it. Give it a try!


4 Tbs. butter 3 stalks celery, sliced
1 large onion, chopped 6 Tbs. quick barley
1 lb. fresh mushrooms, sliced 2 medium potatoes, diced
1 1/2 qt. chicken broth (6 cups) salt and pepper, to taste
3 carrots, shredded

Sauté onions and mushrooms in butter until tender. Add remaining ingredients. Bring to the boil and then simmer for 1 hour.
