I used this when I was teaching and everyone seemed to loved it. Give it a try!
4 Tbs. butter | 3 stalks celery, sliced |
1 large onion, chopped | 6 Tbs. quick barley |
1 lb. fresh mushrooms, sliced | 2 medium potatoes, diced |
1 1/2 qt. chicken broth (6 cups) | salt and pepper, to taste |
3 carrots, shredded |
Sauté onions and mushrooms in butter until tender. Add remaining ingredients. Bring to the boil and then simmer for 1 hour.
