Whether large or individual patties, this is delicious.
1 1/2 lbs. lean ground pork | 1 onion, chopped small |
1 lb. ground chuck | 1 tsp. salt |
6 slices smoky bacon, diced & cooked crisp | 2 tsp. freshly ground pepper |
2 Tbs. bacon drippings | 1 large round sourdough or rye bread* |
2 small garlic cloves, minced |
Sauté garlic and onion in bacon drippings until just soft. Cool. Combine everything into one 11 pattie on wax paper, on a baking sheet. Chill one hour, covered well. Flip pattie onto hot greased grill. Remove wax paper. Grill about 8 minutes. Using baking sheet as a turner, slide under pattie. Place second baking sheet on top of pattie. Holding sheets together, flip to cooked side up. Push pattie onto grill with other sheet; cook for 8 more minutes. Cut bread in half; butter it and grill to toast, if desired. Have bowls of onion, sliced tomato, pickles, sautéed mushrooms, lettuce, mayo, you know, all the extras. To serve: Cut into wedges as for a pie and let everyone add their favorite stuff.
*Specialty bread stores will carry large round breads.
