Pineapple Chicken Salad

Buy a ripe sweet smelling pineapple for this refreshing salad. A summer time treat.


1 fresh pineapple 2/3 cup mayonnaise
2 cups diced fresh pineapple 2 Tbs. mango chutney
2 cups diced cooked chicken breast 1/2 - 1 tsp. curry powder
1/2 cup toasted walnuts, coarsely chopped  Leaf or Boston Bibb lettuce
1 cup chopped celery Garnish with strawberries
and sliced star fruit.
2/3 cup sour cream

Trim pineapple by cutting off top and bottom. Cut from the top down, remove outside peel of pineapple. Cut off, 4 or 5 - 1” thick slices. Remove core and set aside. Cut remaining pineapple into bite size pieces. Combine sour cream, mayonnaise, chutney and curry. Blend well and add salt and pepper to taste. Add remaining ingredients. Mix well and chill for 2 hours. Place leaf lettuce on individual plates. Place pineapple slice on top and put a serving of chicken salad on top. Serves 4 - 5.
