If you have one of these irons, haul it out and make these colorful, crispy wafer cookies. Have a basket full to send each guest home with a package.
1/2 cup butter or margarine, melted and cooled |
2 tsp. baking powder |
3 eggs | 2 Tbs. to 1/8 cup water |
3/4 cup sugar | red, green, & yellow food coloring |
2 tsp. vanilla | strawberry & lemon extract |
1 3/4 cups flour |
Melt butter and cool slightly. Beat eggs in mixing bowl until light. Add sugar and vanilla. Mix well and add butter. Mix and add flour. Batter will be stiff. Add water 1 Tbs. at a time until mixture resembles pancake batter. Divide mixture into three bowls. Tint and flavor one strawberry/red, making a bright pink. Tint another yellow/lemon extract and the last green. Heat pizzelle iron as manufacturer directs. Place one rounded teaspoonful of EACH color in center of iron and close.
(NOTE: My iron requires me to count to ten and remove them to a cooling rack. Any longer and they will brown to much and not have color.) If you find that this short time does not get them crispy; place them on cooling rack in a 200F. oven for 15 minutes. It will crisp them up. Sprinkle with powdered sugar. Cool and store airtight.
