Frozen puff pastry makes this quick and excellent! Take advantage; plums are coming into the market. Any variety make a delicious dessert.
1 sheet frozen puff pastry, thawed | 2 Tbs. flour |
1 egg, beaten | 1 3/4 lb. red plums, pitted, cut into 6 wedges |
1/2 cup sliced almonds, toasted | 1/3 cup plum preserves |
7 Tbs. sugar, divided | 1 Tbs. water |
1/2 cup whipping cream | 1/4 cup sour cream |
2 Tbs. powdered sugar | dash of cinnamon |
Place rack in the bottom third of oven and preheat to 400F. Line baking sheet with foil. Roll sheet of pastry on lightly floured pastry cloth to 14 square. Cut off a 1 wide strip of pastry from each side. Brush one side of each strip with beaten egg; place strips, egg side down on pastry square, forming edge. Combine almonds, 2 Tbs. sugar and flour. Mix and sprinkle evenly on pastry. Chill in freezer 10 minutes. Brush edges of pastry with egg. Place plums in bowl and toss with 4 Tbs. sugar. Arrange plums on pastry, cut side down. Bake 30 minutes at 400F. Combine preserves and water and microwave just long enough to melt jam. Brush on plums. Combine cream, powdered sugar, sour cream and whip until soft peaks form. Serve with tart. Serves 6.
