Honey Pepper Pork Loin

Having guests? Give this delicious pork roast a try. Serve with twice baked potatoes and some freshly cooked asparagus. For me, you need a warmed bowl of homemade applesauce.


1/3 cup honey 1/2 tsp. salt
2 Tbs. Dijon mustard 2 1/2 lb. boneless rolled pork loin roast
2 Tbs. crushed peppercorns   1 cup cranberry juice
1/2 tsp. dried thyme

Combine first five ingredients, mixing well. With fingers, push mixture in-between openings of tied roll. Rub some on the outside. Place meat on a roasting rack in pan. Add cranberry juice to pan and cover. Roast at 350F. for 1 hr. Baste with remaining honey mixture and pan juices; cook 1 hour more or until tender and meat thermometer registers 170F. Cool 10 minutes before slicing. Serve with relish. Serves 6-8.
