Fresh salmon marinated in bottled teryaki sauce or mine and then sauteed in butter, turns into a wonderful spread. Serve on crackers or do the rye bread thing. Most delicious!!
6 oz. fresh boneless salmon | seasoned salt |
1/3 cup teryaki sauce, my recipe follows | dash or two of paprika |
2 Tbs. butter |
1/2 cup butter or margarine, soft | 1/2 tsp. lemon pepper |
8 oz. pkg. cream cheese, room temperature | 1 small sliced party rye |
1 Tbs. fresh minced dill weed or 1 tsp. dried | 1/2 cup butter, melted |
2 tsp. *Penzys Fox Point Seasoning or dried chives | dash of worcestershire sauce |
1 Tbs. fresh lemon juice |
Remove any dark portions on fish. Place in container with teryaki sauce
and chill 30 minutes. In saute pan melt butter. Add fish reserving marinade.
Saute salmon until a golden brown. Add reserved marinade and continue to
saute over low heat until marinade reduces and forms a glaze on salmon. Remove
salmon and any reserve glaze to a plate to cool completely. In food processor
blend butter, cream cheese, dill weed, Fox Point seasoning, lemon juice and
lemon pepper. Blend smooth. Flake salmon with fingers or fork into small
flakes. DO NOT DO THIS IN FOOD PROCESSOR. You want to see pieces of salmon.
Stir into cream cheese mixture. Taste and adjust seasonings to suit. Makes

Rye Rounds:
Cut 2 circles out of slices of rye bread. Add worchestershire sauce to melted butter. Lightly brush on both sides of rye rounds. Place on baking sheet. Bake at 300F for 8 -10 minutes, turning half way, until crisp. These can be store airtight.
Teriyaki Sauce:
I keep a jar of this in the fridge year-round. Great for stir-fries or
marinating anything.
1 cup low-sodium soy sauce, (makes it less salty) | 1/3 cup honey |
1/2 cup pineapple juice, fruit juice or water | 1 Tbs. worchestershire sauce |
1/4 cup cooking oil | 1 fresh ginger, sliced |
2 Tbs. dry onion flakes or 3 Tbs. grated fresh onion | 1 - 2 cloves sliced garlic |
1/2 cup brown sugar |
Combine everything in a jar, shake well. This makes a lot and keeps in the refrigerator forever. I have actually used this as a salad dressing.
