Tomato Baked Scrod

Use your favorite firm fish. Serve this to guests. They will never know it's fat free.


Preheat oven to 400F. Place fish in a sprayed 2 1/2 qt. baking dish. Sprinkle with pepper. Spoon tomatoes on fish. Top with o

4– 6 oz. pieces scrod or firm type fish 2 Tbs. capers, drained
freshly ground pepper 2-3 Tbs. chicken broth or white wine
1-16 oz. can stewed tomatoes, well drained   freshly minced parsley
1/4 cup sliced black olives lemon wedges
lives and capers. Pour broth over fish. Bake uncovered 15 minutes or until fish flakes easily. Serve with a wedge of lemon. Serves 6 persons, about 170 calories per portion.
