The Best Spaetzles

I've given you quantities for dumplings for soup or to use these as a side dish.


For Soup For Side Dish
1 cup milk 1 1/2 cups milk
2 eggs 3 eggs
2 cups flour         3 cups flour
1/2 tsp. salt 3/4 tsp. salt

Put flour and salt in a bowl. Whisk together, milk and eggs. Add to the flour and mix smooth. This is a soft dough. Put through spaetzle maker over boiling water. A large holed colander may work also. Cook for 3-5 minutes and drain. If these are to be used as a side dish~~~~ Drain well, when done. In a fry pan put 3 Tbs. butter. Add spaetzles and sauté just until they are coated with butter and heated through. Garnish with a little fresh minced parsley.
