Susie's Chocolate Oatmeal Cake

My neighbor shared this old wonderful, fashioned cake recipe with me. It’s moist, rich and in my opinion, doesn’t need frosting. If you must, a light, white butter frosting will fill the bill. Chocolate sprinkles would make this fun for little ones. This would make a great picnic cake.


1 1/2 cups quick oatmeal             1 1/2 cups flour
2 1/4 cups boiling water 3/4 cup baking cocoa
3/4 cup butter, softened 1 1/2 tsp. baking soda
2 1/4 cups sugar 3/4 tsp. salt
3 eggs 1/2 cup chopped walnuts, opt.
1 tsp. vanilla

Preheat 350F. Grease and flour a 13” x 9” pan. In mixing bowl combine oatmeal and boiling water.Stir and let stand until cool. Cream butter and sugar well, until light in color. Add eggs one at a time. Combine dry ingredients and add alternately with oatmeal mixture, ending with flour mixture. Bake for 30 - 40 minutes or a tester comes out clean. Cool on rack and devour.
