Swiss Vegetable Medley

Not the same old green bean casserole but an updated family friendly veggie dish from my cousin Lorna.


1 - 16 oz. bag frozen vegetable
  combination (broccoli, carrots and
  cauliflower), thawed and drained
dash or two black pepper
1 can cream of mushroom soup 1 - 4 oz. jar pimento, drained
1 cup (4 oz.) shredded Swiss cheese     1 can French fried onions
1/3 cup sour cream

In large bowl combine vegetables, soup, 1/2 cup Swiss cheese, sour cream, pepper, pimento and 1/2 can French fried onions. Pour into a greased, shallow 1 qt. casserole. Bake, covered at 350F. for 30 minutes or until vegetables are done. Sprinkle with remaining onions and cheese, bake uncovered 5 minutes or until cheese is golden brown. Serves 6- 8.
