Come home after a hard day, to this wonderful dinner. You can do this with chicken breasts too!
1 - 20 oz. can pineapple chunks, drained & reserved | 2 lb. skinless turkey breast |
1 lg. green bell pepper | 1/4 tsp. seasoned salt |
1 lg. red bell pepper, cut both peppers into 1 sq. | 2 Tbs. cornstarch |
l lg. onion, chopped | 1/3 cup reserved pineapple juice |
1/3 cup catsup | 2 - 10 oz. pkg. frozen snow pea pods, thawed and drained |
1/4 cup brown sugar | 2 med. tomatoes, cut into wedges |
3 Tbs. red wine vinegar |
Place the pineapple chunks in a bowl with peppers, onion, catsup, brown sugar and vinegar. Mix well. Pour half into slow-cooker. Add turkey breast. Season it with seasoned salt and pour on remaining mixture. Cook on Hi for 3 1/2 - 4 hours or low for 6-8 hrs. Remove the turkey, making sure it is cooked through and juices run clear. Combine the cornstarch and reserved pineapple juice and add to pot. Stir to thicken. Add pea pods and tomato wedges. Slice turkey and top with sauce. Serves 5 - 6. Serve with steamed rice.
