Yvonne's German Potato Salad

Nothing fancy here, but maybe you'd like to try our favorite.


4 - 5 Potatoes, cooked and sliced
1 cup celery, diced
1 small onion, finely chopped
1/2 cup green pepper, diced
8-10 slices Bacon, diced
1/3 cup white vinegar 1/3 cup cider vinegar
1/2 cup sugar 3 Tbls. cornstarch
1 1/2 cups water 1-2 tsp. celery seed
salt and pepper

In a large fry pan cook bacon until crisp. Remove with a slotted spoon to drain on toweling. Measure 1/4 cup bacon drippings and return it to pan. Combine the cornstarch and water. Add to pan the sugar, vinegars, water with cornstarch and celery seed. Cook, stirring until thick. In large bowl combine potatoes, celery, onion, green pepper and cooked bacon. Mix gently with a spatch and pour half of the sauce over. Mix, adding salt and pepper. Add more sauce just so that everything is coated nicely. Any sauce that is leftover goes perfectly as a dressing for hot spinach salad.
