If you have a grill like I do with a little burner attached to the side, this will be a snap.
2-3 lbs. cut-up chicken | freshly ground pepper & salt |
1/3 cup cooking or olive oil | 2 red & 2 green pepper, seeded & cut into rings |
1 lb. Italian sausage | 1 large tomato chopped |
1 pkg. dry, (0.05 oz.) Italian salad dressing mix | 1- 14.5 oz. can Hunts DicedTomatoes with Crushed Red Peppers & Basil |
1 large onion, sliced | 3 Tbs. packed brown sugar |
1 clove garlic, minced | 1/2 cup red wine or water |
Wash chicken and pat dry. Rub with 3 Tbs. of the oil. Grill over medium heat until brown. Grill sausages until no longer pink inside. Place remaining oil and salad dressing in a large fry pan or pot with a flame proof handle. Saute onion, garlic and peppers. Add everything and cook covered for 1/2 hour. Serve with pasta or rice. Serves 6-8 very well.
