Seafood Brochettes

Soak the bamboo skewers so they won’t burn.


1/2 lb. cod, tuna or other firm fish 8 - 10 fresh large mushrooms
1/2 lb. sea scallops 1 large green pepper
1/2 lb. raw shrimp, peeled and deveined     1 red onion
4 - 6 slices bacon

Sunshine Marinade
1/3 cup canola oil 1 tsp. grated fresh ginger
1/4 cup pineapple juice freshly ground pepper
1 Tbs. honey mustard Bamboo skewers
1 Tbs. lemon juice

Cut slices of bacon into thirds.Wrap around scallops.Cut onion into quarters and separate into “petals”. Divide these ingredients onto skewers, making them as full as desired. Combine sauce ingredients and marinate kabobs for 1 hour. Grill until seafood is done, basting as it cooks. Don’t overcook!!
